Maison Braise’s imagined workshop, Annecy. The story of a house
It all begins
with a smell.
The smell of the coffee Camille’s grandfather made every Sunday, before the house had even woken up.
Years later, Camille rediscovers that memory in a small roastery. There she meets Gabriel, a roaster who talks about his beans the way others talk about a great wine. They share a conviction: a fine coffee should never be reserved for the initiated.
In 2018, they open Braise in a former workshop, a stone’s throw from Lake Annecy. A name for warmth. A house for the craft. And the wish to rediscover, cup after cup, the emotion of that first morning.

The little details that make
a big difference.
I know nothing about coffee: which one should I choose?
Start with Grand matin if you like the softness of chocolate and hazelnut. Velours noir suits cravings for a round espresso. Plein soleil and Fruit rouge invite you to discover more floral or fruity flavours, especially lovely as filter coffee. Still unsure? The trio lets you compare three profiles, with the same brew method.
How do I choose my grind?
Your coffee maker matters more than the taste you’re after. Espresso: fine grind. Filter: medium to medium-fine depending on your device. French press: coarse. Moka pot: moka-specific, less fine than for espresso. Find the doses and steps in our brewing guide. With a grinder or a bean-to-cup machine, choose “Whole beans”.
The coffee is too bitter, too acidic or too weak?
Change one setting at a time and keep a note of your recipe. With espresso, a flow that’s too fast often calls for a finer grind; too slow, a coarser one. With filter, check the dose and the evenness of the pour first. Bitterness and acidity can also belong to the coffee itself: our guide gives starting points, to adjust to your taste and your equipment.
How do I keep the aromas fresh at home?
Once opened, keep the coffee in an opaque, airtight container in a cool, dry place, away from heat and light. Grind only the dose you’re about to brew. Prefer small quantities suited to how much you drink. Storage advice: National Coffee Association ↗
What do the “chocolate” or “bergamot” notes mean?
They are tasting markers: they describe aromatic impressions, not added ingredients. The brew and the person tasting both influence perception. For this demo, the coffee profiles are imagined; they do not come from tasting real lots. Understanding the descriptors: World Coffee Research ↗
